Simple Recipes For Dinner Party

Caribbean Chicken

  • 6 Chicken legs (skinned)
  • Freshly made Tomato puree
  • Salt to taste
  • ½ tbsp red Chilly powder
  • 4 Sliced Onions
  • 1 tbsp Ginger-Garlic paste
  • 2 tbsp Lemon juice
  • Marinate the chicken legs in lemon juice for 30 minutes.
  • Take a pan and add oil to it.
  • Stir fry the onions and add ginger garlic paste to it.
  • Fry until oil separates from the rest of the mixture.
  • Add the marinated chicken legs.
  • Sprinkle red chilly powder and salt.
  • Cover the pan with a lid and cook the chicken until it becomes tender.
  • When the chicken is almost done, add the freshly prepared tomato puree.
  • Cook for 2 minutes and serve hot with rice.

Chicken Salad

  • Small Chicken cubes
  • 2 Boiled Eggs (quartered or scrambled)
  • 2 Cucumbers
  • 2 Bell Peppers
  • 2 Onions
  • Freshly chopped Lettuce leaves
  • Salt and Pepper
  • Mayonnaise
  • Honey Mustard Salad dressing
  • 1 tbsp Olive oil
  • Oregano flakes 
  • Brush oil on the chicken cubes and season with salt and pepper. Microwave it for 5 minutes or until tender.
  • Dice cucumber, bell peppers, onions, and lettuce leaves uniformly.
  • Take a salad bowl and mix all the ingredients in it.
  • Add mayonnaise and honey mustard salad dressing.
  • Mix olive oil to it.
  • Sprinkle salt and pepper to taste.
  • Mix all the ingredients comprehensively.
  • Refrigerate the salad for 30 minutes.
  • Toss it with oregano flakes and serve chilled. 

Tomato Sauce Fish Fillet


  • ½ lb Fish fillets
  • 2 tbsp grated Parmesan Cheese
  • 1 Tomato (seeded and chopped)
  • 2 tbsp minced Onion
  • ½ cup shredded Colby Cheese
  • 1 tbsp Olive oil
  • Salt and Pepper to taste
  • Take a microwave safe baking dish and brush it with olive oil.
  • Arrange the fish in the dish side by side.
  • Coat the fish fillet with olive oil.
  • Add the remaining ingredients to the fish except the cheese.
  • Cover it with a microwave safe lid.
  • Microwave it for 3-4 minutes or until done.
  • Toss it with cheese.
  • Allow it to stand for a few minutes and then serve it hot.
