Grilled Sausage with Potatoes and Green Beans
Ingredients
- 3/4 pound Fresh Green Beans, trimmed and halved
- 1/2 pound Red Potatoes, quartered
- 1 large Onion, sliced
- 1 pound Smoked Sausage, cut into 1 inch pieces
- 1 teaspoon Salt
- 1 teaspoon Ground Black Pepper
- 1 teaspoon Vegetable Oil
- 1 teaspoon Butter
- 1/3 cup Water
Instructions
- Preheat an outdoor grill to attain high temperature.
- Take a large sheet of foil, place green beans, red potatoes, onion, and sausage over it.
- Sprinkle it with salt and pepper as well as with oil and top with butter.
- Now, tightly wrap the foil around the ingredients, leaving a small opening.
- Pour water into the opening and seal it completely.
- Place the foil packet on the preheated grill.
- Cook for 20 to 30 minutes.
- Turn it once and cook until sausage is browned and vegetables become tender.
Grilled Tilapia with Mango Salsa
Ingredients
- 1/3 cup Extra-Virgin Olive Oil
- 1 tablespoon Lemon Juice
- 1 tablespoon Fresh Parsley, minced
- 1 clove Garlic, minced
- 1 teaspoon Dried Basil
- 1 teaspoon Black Pepper, ground
- 1/2 teaspoon Salt
- 2 (6 ounce) Tilapia Fillets
- 1 large ripe Mango, peeled, pitted and diced
- 1/2 Red Bell Pepper, diced
- 2 tablespoons Red Onion, minced
- 1 tablespoon Fresh Cilantro, chopped
- 1 jalapeno Pepper, seeded and minced
- 2 tablespoons Lime Juice
- 1 tablespoon Lemon Juice
- Salt and Pepper to taste

- Take a bowl and mix the extra-virgin olive oil, 1 tbsp lemon juice, parsley, garlic, basil, 1 tsp pepper and 1/2 tsp salt.
- Pour the contents into a resealable plastic bag.
- Now add the tilapia fillets and coat with the marinade.
- Squeeze excess air out of the bag and seal it.
- Marinate in the refrigerator for 1 hour.
- To prepare the mango salsa, mix mango, red bell pepper, red onion, cilantro and jalapeno pepper in a bowl.
- Now, add lime juice and 1 tbsp lemon juice and toss it well.
- Season it with salt and pepper and refrigerate.
- Preheat an outdoor grill for medium-high temperature and lightly oil grate.
- Remove the tilapia from the marinade, discarding the remaining marinade.
- Grill the fillets till the fish becomes translucent in the center and flakes easily with a fork.
- Cook for 3 to 4 minutes per side, depending on the thickness of the fillets.
- Serve the tilapia, topped with mango salsa.
Grilled Salmon I
Ingredients
- 1 1/2 pounds Salmon Fillets
- Lemon Pepper to taste
- Garlic Powder to taste
- Salt to taste
- 1/3 cup Soy Sauce
- 1/3 cup Brown Sugar
- 1/3 cup Water
- 1/4 cup Vegetable Oil
Directions
- Take salmon fillets and season them with lemon pepper, garlic powder, and salt.
- Take a small bowl and mix soy sauce, brown sugar, water and vegetable oil, till the sugar gets dissolved.
- Place the fish in a large sealable plastic bag, along with soy sauce mixture. Refrigerate for at least 2 hours.
- Preheat the grill on medium heat.
- Lightly oil grill grate.
- Place the salmon on the preheated grill and discard marinade.
- Cook it for 6 to 8 minutes on each side or until the fish flakes easily with a fork.
