Grilled Sausage with Potatoes and Green Beans
  • 3/4 pound Fresh Green Beans, trimmed and halved
  • 1/2 pound Red Potatoes, quartered
  • 1 large Onion, sliced
  • 1 pound Smoked Sausage, cut into 1 inch pieces
  • 1 teaspoon Salt
  • 1 teaspoon Ground Black Pepper
  • 1 teaspoon Vegetable Oil
  • 1 teaspoon Butter
  • 1/3 cup Water 
  • Preheat an outdoor grill to attain high temperature.
  • Take a large sheet of foil, place green beans, red potatoes, onion, and sausage over it.
  • Sprinkle it with salt and pepper as well as with oil and top with butter.
  • Now, tightly wrap the foil around the ingredients, leaving a small opening.
  • Pour water into the opening and seal it completely.
  • Place the foil packet on the preheated grill.
  • Cook for 20 to 30 minutes.
  • Turn it once and cook until sausage is browned and vegetables become tender. 
Grilled Tilapia with Mango Salsa
  • 1/3 cup Extra-Virgin Olive Oil
  • 1 tablespoon Lemon Juice
  • 1 tablespoon Fresh Parsley, minced
  • 1 clove Garlic, minced
  • 1 teaspoon Dried Basil
  • 1 teaspoon Black Pepper, ground
  • 1/2 teaspoon Salt
  • 2 (6 ounce) Tilapia Fillets
  • 1 large ripe Mango, peeled, pitted and diced
  • 1/2 Red Bell Pepper, diced
  • 2 tablespoons Red Onion, minced
  • 1 tablespoon Fresh Cilantro, chopped
  • 1 jalapeno Pepper, seeded and minced
  • 2 tablespoons Lime Juice
  • 1 tablespoon Lemon Juice
  • Salt and Pepper to taste 
  • Take a bowl and mix the extra-virgin olive oil, 1 tbsp lemon juice, parsley, garlic, basil, 1 tsp pepper and 1/2 tsp salt.
  • Pour the contents into a resealable plastic bag.
  • Now add the tilapia fillets and coat with the marinade.
  • Squeeze excess air out of the bag and seal it.
  • Marinate in the refrigerator for 1 hour.
  • To prepare the mango salsa, mix mango, red bell pepper, red onion, cilantro and jalapeno pepper in a bowl.
  • Now, add lime juice and 1 tbsp lemon juice and toss it well.
  • Season it with salt and pepper and refrigerate.
  • Preheat an outdoor grill for medium-high temperature and lightly oil grate.
  • Remove the tilapia from the marinade, discarding the remaining marinade.
  • Grill the fillets till the fish becomes translucent in the center and flakes easily with a fork.
  • Cook for 3 to 4 minutes per side, depending on the thickness of the fillets.
  • Serve the tilapia, topped with mango salsa.
Grilled Salmon I
  • 1 1/2 pounds Salmon Fillets
  • Lemon Pepper to taste
  • Garlic Powder to taste
  • Salt to taste
  • 1/3 cup Soy Sauce
  • 1/3 cup Brown Sugar
  • 1/3 cup Water
  • 1/4 cup Vegetable Oil 
  • Take salmon fillets and season them with lemon pepper, garlic powder, and salt.
  • Take a small bowl and mix soy sauce, brown sugar, water and vegetable oil, till the sugar gets dissolved.
  • Place the fish in a large sealable plastic bag, along with soy sauce mixture. Refrigerate for at least 2 hours.
  • Preheat the grill on medium heat.
  • Lightly oil grill grate.
  • Place the salmon on the preheated grill and discard marinade.
  • Cook it for 6 to 8 minutes on each side or until the fish flakes easily with a fork.
