How To Make Zucchini Bread
Simple Zucchini Bread
Ingredients
- 3 cups Fresh Zucchini, grated
- 2 Eggs, beaten
- 2 tsp Baking Soda
- 2/3 cup Unsalted Butter, melted
- 1 1/3 cup Sugar
- 3 cups All-Purpose Flour
- 2 tsp Vanilla Essence
- 1/2 tsp Nutmeg
- 2 tsp Cinnamon
- Pinch of Salt
- 1 cup Walnuts, chopped (optional)
- 1 cup Dried Raisins (optional)
Procedure
- In a large bowl, combine sugar, vanilla essence and beaten eggs.
- Add grated zucchini and melted butter. Blend the mixture well.
- Add baking soda and salt and mix it well.
- Stir in all-purpose flour, one third at a time, into the mixture.
- Add cinnamon and nutmeg to the mixture and blend well.
- Sprinkle walnuts, dried raisins into the mixture.
- Divide the prepared batter into two loaf-pans, each greased with butter.
- Preheat the oven to 350 degrees F.
- Bake the loaf pans in the preheated oven for one hour.
- To check whether the bread is baked, insert a tooth pick in the center of loaves. If the toothpick comes out clean, the bread is ready.
- Remove the pans, with zucchini bread loaves, from the oven and allow them to cool thoroughly at room temperature, before taking out the bread.
Carrot Zucchini Bread
Ingredients
- 1 cup Zucchini, shredded
- 1 cup Carrot, shredded
- 2 Eggs, beaten
- 3 1/2 cups All-purpose Flour
- 1 tbsp Baking Powder
- 1 tsp Baking Soda
- 1 tsp ground Cinnamon
- 1 1/2 cups Buttermilk
- 2 tbsp Butter, melted
- 1/2 cup packed Brown Sugar
- 1/2 tsp Salt
- 1 tsp Orange Peel, grated
- 1 tsp Lemon Peel, grated
- 1/2 cup Walnuts, chopped
Procedure
- Sieve together all-purpose flour, baking soda, baking powder, cinnamon and salt. Set aside.
- In a large bowl, mix beaten eggs with melted butter and buttermilk. Add brown sugar to the mixture and blend it well.
- Add zucchini, shredded carrots, lemon and orange peel to the mixture and mix well.
- Stir in chopped walnuts. This will make the batter for the bread.
- Grease two 9x5inch loaf pans with butter.
- Divide the batter into 2 equal halves and transfer them into the loaf pans.
- Preheat the oven to 350 degrees F.
- Bake the loaf pans in the preheated oven, for one hour.
- After the loaves of bread get baked, remove the pans from the oven.
