Apple/Pear Tuna Salad


  • 2 tbsp Green Pepper (diced)
  • 1 medium Apple or Pear
  • 2 tsp Lemon juice
  • 3 oz water packed Tuna
  • Lettuce cup
  • Artificial sweetener
  • 1 tbsp French or Italian dressing (low calorie)
  • Dice the apple or pear and toss it with tuna and green pepper.
  • Mix together the French or Italian dressing, lemon juice, and the sugar substitute and pour the mixture over the salad and toss it well.
  • Put the salad into the lettuce cup and serve.

Baked Chicken With Apples


  • 1 Chicken bouillon cube
  • 2 ½ to 3 lb Chicken (cut into pieces)
  • ¼ tsp Pepper
  • ½ tsp Salt
  • 1 cup Apples (peeled and diced)
  • ½ cup Apple juice
  • ½ cup boiling Water
  • 1 oz Bread
  • 1 tbsp Flour
  • 1 tsp ground Cinnamon
  • 2 cups of Green Beans (sliced in the French style)
  • Sprinkle salt and pepper over both sides of the chicken and place it over a shallow open roasting pan.
  • Bake the chicken in a preheated oven for about 20 minutes in 450degrees C temperature and then reduce the temperature to 350 degrees C after 20 minutes.
  • Remove the chicken and pour out any extra fat from the pan.
  • Dissolve bouillon cubes in boiling water and pour it over the chicken along with the apple juice.
  • Add in the green beans and cover the pan and bake it again with added ingredients for 25 minutes.
  • After 25 minutes of baking, stir in apple cubes and bake for another 10 minutes.
  • Alongside, take a saucepan and mix together flour and cinnamon along with 1 tablespoon of cold water.
  • Stir in this mixture into the hot pan liquid. Cook and stir until the mixture boils and gains thickness.
  • Serve the mixture along with the chicken and the vegetables.

Cucumber Mint Smoothie


  • 1 ½ cups of Apple juice or Still Cider
  • 1 Cucumber (peeled, seeded and chopped)
  • 1 cup of Ice cubes
  • 3 tbsp Mint leaves and Mint springs (finely chopped)
  • 1 cup of Lemon Sorbet
  • Blend the cucumber, mint, ice cubes, and apple juice and lemon sorbet together until smooth.
  • Garnish it with mint and serve chilled.

Broiled Chicken With Garlic

  • Chicken bouillon
  • 6 cloves of Garlic
  • 2 ½ lbs Chicken (quartered)
  • Salt and Pepper to taste
  • ¾ tsp Rosemary (powdered)
  • Rub two garlic cloves and rosemary against the chicken. Sprinkle with salt and pepper as well.
  • Let the chicken to stand for 30 minutes and then put it in broiler pan and coat it up with chicken bouillon.
  • Sprinkle splintered garlic cloves and add a little bouillon to the pan.
  • When half done coat the top sides with bouillon and 2 more slivered cloves of garlic and baste it with pan drippings.

Diabetic Chocolate Chip Cookies

  • 1 Egg
  • ¾ cup Flour
  • ¼ cup Margarine
  • 1 tbsp granulated Fructose
  • ½ cup mini semi-sweet Chocolate chips
  • 1 tsp Vanilla extract
  • ¼ tsp Salt
  • Mix together margarine and fructose and convert it into a paste. Beat in the egg, water and vanilla extract into the cream.
  • Mix together baking soda, salt and flour in a sieve.
  • Sift all the dry ingredients into the cream mixture and stir it well to blend.
  • Add in the chocolate chips and drop the cream with the help of a spoon onto the greased cookie sheet about 2 inches apart.
