Custard Bread Pudding Recipes
Basic Custard Bread Pudding

Beat together all the ingredients except the bread in a blender. Blend till the ingredients come almost to the top.

Whip the blend until it turns frothy and then pour it into a deep oval dish.

Now soak the bread in the blend until it rises to the top. Sprinkle some cinnamon and place in a large pan with water.

Bake it at 360oF for an hour.
Chocolate Custard Bread Pudding

Arrange the slices of bread in a platter and pour a little cold water over them. After a while squeeze out the water and keep the bread aside.

Take a bowl; add egg yolks and demerara sugar, milk and vanilla extract.

Melt the chocolate chips in a double boiler and add it into the egg and milk mixture. Take an oven proof dish and place the moistened bread in it. Then, pour the chocolate and egg mixture over it.

Place the oven proof dish in a pan containing water and bake it in an oven at 300oC for an hour.

Once baked, place the pudding in a refrigerator for it to chill. Then serve in individual dessert bowls with whipped cream.
Banana Custard Bread Pudding

250 ml skimmed Milk

4 firm Bananas (sliced)

½ cup unsalted Butter

2 tbsp Corn flour

4 Eggs

2 cups of Bread crumbs

2 cups Brown Sugar

1 tbsp Vanilla extract
Method

Take a small saucepan and mix the brown sugar, a pinch of salt and corn flour together. Now add milk slowly to the same bowl.

Cook this mixture over medium heat, stirring it continuously to prevent the mixture from burning.

Separate the egg yolks in a bowl and keep it aside. Take some of the milk and corn flour mixture and then add it into the egg yolks.

Stir the mixture until the yolks blend well with the milk and then return it back into the saucepan.

Keep stirring the mixture and remove it from the heat when you get the desired consistency. Add in the vanilla extract and butter and let the mixture cool down.

Arrange the bread cubes and banana slices in a greased baking dish. Pour the custard mixture over the bread and bake it in an oven at 350oC for 45- 50 minutes.
