How To Make Tiramisu

Tiramisu is one of the most popular desserts of Italy. It is made of deliciously rich mascarpone and ladyfingers dipped in espresso, laced with rum and sprinkled with cocoa powder. This sinfully delicious gourmet dessert will put the perfect finishing touches to a great dinner. The name “tiramisu” literally means to “cheer me up” or “pick me up” and that’s exactly what it does. As you sink your teeth into the creamy layers and roll it on your tongue, you will delight your senses like never before. As each creamy bite slowly goes down your throat, you will feel warmth and satisfaction spreading through your body, which has nothing to do with the rum in it. There is always a dish for which you can forsake the usual calorie count – and tiramisu is that dish. The good news is that, while this is a gourmet dish, you do not need to save for months to go out to a posh restaurant and get a bite out of it. You can now make your own tiramisu at home. Of course, the presentation will not be the same, but the taste could be even better. It is also a fantastic way to get your guests drooling over the tablecloth in anticipation of dessert. Tiramisu Recipe
 
Ingredients 
  • Egg yolks – 8
  • Sugar – 1 cup
  • Dark rum – ½ cup
  • Cold water – ½ cup
  • Mascarpone – 2.5 pounds
  • Coffee reduction or espresso – 2 cups
  • Kahlua
  • Chocolate shavings or cocoa powder
  • Amaretto
  • Ladyfingers 
Method 
  • Prepare the coffee reduction or espresso by simmering 4 cups of coffee till it is reduced in half. Strain it with a coffee strainer and keep it aside.
  • Mix the rum, egg yolks, amaretto, water, and sugar in a double boiler until the mixture is thick. This mixture is called zabaglione.
  • Cool this over an ice bath. Mix the zabaglione and mascarpone cheese together until it is smooth and creamy.
  • Add kahula to the coffee reduction.
  • Take a 10-inch pan or casserole dish and line it with parchment paper or aluminum foil.
  • Put a layer of ladyfingers with the flat side on the bottom of the pan. Ensure that there is a gap of at least an inch between the sides of the ladyfingers.
  • Soak the ladyfingers with the coffee reduction using a pastry brush.
  • Take a pastry bag and fill it with the mascarpone-zabaglione mixture. Use this mixture to pipe cream in the gap between the ladyfingers so that it is filled. You can also use this cream on top of the ladyfingers for a better effect.
  • Hold the ladyfingers straight up with the sugary side facing the pan. Fit them tightly against each other by pushing them into the cream.
  • Add another layer of cream and place ladyfingers on top of it.
  • Brush the new layer of cream with the coffee reduction and add more cream.
  • You can add multiple layers of ladyfingers and even cut them if you wish.
  • Cover this with parchment or aluminum foil and chill overnight.
  • Remove the foil and sprinkle with chocolate shavings or cocoa powder.
  • Serve your delicious tiramisu dessert.
