  • 1 lb lean Beef (ground)
  • 1 or 2 tbsp Salad oil
  • 1 medium sized Onion (chopped)
  • ½ cup Mexican Red Chili sauce or Enchilada sauce (canned)
  • 8 Corn Tortillas 
  • Salad oil (for deep frying)
  • 2 to 3 cups of Lettuce (shredded)
  • 1 cup mild Cheddar Cheese (shredded)
  • Taco sauce (canned or bottled)
  • In a frying pan, break apart and brown the meat adding oil if necessary.
  • Now add the onion and cook until soft.
  • Now add the sauce and simmer slowly for about 10 minutes.
  • Keep stirring until the liquid evaporates.
  • Keep warm, or reheat.
  • Fry one tortilla in about ½ inch of hot oil till it becomes soft in just a few seconds.
  • Then fold it in half and hold slightly open with tongs or two forks so that there is a space between the halves for the filling to be added later.
