Ingredients
  • ¾ cup Butter (melted and cooled)
  • 1 cup Milk
  • 3 Eggs
  • 1 tsp Vanilla Extract
  • 1½ cups Granular Sucrolose Sweetener
  • 2 tsp Baking Powder
  • 3 cups All-Purpose Flour
  • 1¾ cups fresh or frozen Blueberries
  • 1½ cups Brown Sugar Substitute
  • ¾ cup Flour
  • 2 tsp ground Cinnamon
  • ½ cup Butter (softened)
Instructions
  • Preheat oven to 350 °F (175 °C).
  • Grease and flour a 9x13 inch baking pan.
  • Mix together melted butter, milk, eggs, vanilla, and sweetener in a large mixing bowl.
  • Add flour and baking powder. Beat until well blended.
  • Stir in the blueberries.
  • Pour the batter into the prepared pan.
  • Take a separate bowl and combine together brown sugar substitute, flour, cinnamon, and butter. Mix to form small crumbles.
  • Sprinkle the crumbly mixture over the batter.

  • 1 tbsp Baking Soda
  • 1 tsp ground Ginger
  • 1½ cups ground Almonds
  • 2 Macintosh Apples (peeled, cored and finely chopped)
  • 1 (8 ounce) package Cream Cheese
  • 3 tbsp unsweetened Apple Butter
  • 2 tbsp frozen Apple Juice Concentrate (thawed)
Instructions 
  • Preheat oven to 350 °F (175 °C).
  • Grease and dust a 9-inch square baking pan.
  • Beat eggs till they drop like ribbons from the beater.
  • Adding oil like a thin stream, continue beating the eggs.
  • Add applesauce and 1 cup apple juice concentrate. Beat again.
  • Gradually add the flour and blend well.
  • Mix in baking soda, ginger, almonds, and apples.
  • Pour the batter into the prepared pan and bake for 40 minutes, until a toothpick inserted comes out clean.
  • Remove from oven and cool on a rack for 15 minutes.
  • Remove from the pan and cool down completely.
  • Prepare the apple frosting by beating cream cheese until soft and fluffy.
  • Add apple butter and apple juice concentrate. Beat thoroughly.
  • Slice the cake horizontally using a long serrated knife.
  • Spread the apple frosting and press the two pieces together.
  • Slice and serve.
Banana Walnut Cake
 
Ingredients
  • 2/3 cup mashed Bananas
  • ½ cup Butter/Margarine (softened)
  • 3 Eggs
  • 2 cups All-Purpose Flour
  • 2 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1 tsp ground Cinnamon
  • ¾ cup Water
  • 1 cup chopped Walnuts
Instructions
  • Take a large mixing bowl and mix together bananas and butter. Beat until creamy.
  • Add eggs and beat again.
  • Sift together flour, baking powder, baking soda, and cinnamon.
  • Add the mixture to the bananas, alternating with water. Beat generously after each addition.
  • Blend in walnuts.
  • Pour the batter into the pan and bake for 30 minutes until a knife inserted comes out clean.
