Crustless Cheddar Carrot Quiche  
 
Ingredients
  • 2 cups Shredded Carrots
  • 1 cup Skim Milk
  • 4 Eggs
  • 2 tbsp Chopped Onions
  • 1/4 tsp Salt
  • 1/4 tsp Ginger
  • 1/4 tsp Pepper
  • 4 oz Cheddar Cheese, grated
  • Cooking Spray
 
Instructions
  • Take a pan and put water in it, such that it covers 1-inch of the pan.
  • Add the shredded carrots to the pan and place on flame.
  • Let the carrots boil in the water, till they become tender.
  • Remove the carrots from flame, strain them, cover the pan and set aside.
  • In a bowl, combine together milk, eggs, onions and seasonings.
  • Stir the drained carrots and cheese into the milk-eggs mixture.
  • Take a baking dish and use cooking spray.
  • Pour the quiche mixture into the dish and bake at 350 degrees, for 30-40 minutes.
  • Cool on a wire rack, for 15 minutes, and serve.
 
Crustless Chicken & Broccoli Quiche
 
Ingredients
  • 2 cups Broccoli Florets, coarsely chopped
  • 2 tbsp Dry Breadcrumbs
  • 3 tbsp All-purpose Flour
  • 1 tsp Dried Basil
  • ¼ tsp Salt
  • 1/8 tsp Pepper
  • 1 cup Low-fat Milk
  • 1 tbsp Dijon Mustard
  • 4-ounce Egg/Egg Substitute
  • 1½ cup Roasted Chicken, chopped
  • ½ cup Reduced-fat Extra-sharp Cheddar cheese, shredded & divided
  • ¼ tsp Paprika
  • Cooking Spray
 
Instructions
  • In a pan, put some water and place it on flame.
  • When the water starts boiling, add broccoli to it and cook for 3 minutes, or until the florets become crisp and tender.
  • Drain the broccoli florets and set aside for later use.
  • Preheat the oven to 350oC.
  • Take a 9-inch pie plate and coat it with cooking spray.
  • Spread a layer of breadcrumbs in the pie plate and set aside.
  • In a large bowl, mix together flour, basil, salt, and pepper.
  • Add milk and mustard and stir with a whisk.
  • Stir the egg/egg substitute into the mixture, followed by chicken and ¼ cup cheese.
  • Pour the mixture in the pie plate, on top of the breadcrumbs.
  • Sprinkle the remaining cheese and paprika on top.
  • Place the plate in the oven and bake at 350 degrees, for 45 minutes.
  • Cool on a wire rack, for 15 minutes, and serve.
