Mustard Greens (aka Indian mustard or the leaf mustard) is a variety of mustard plant that belongs to the Cruciferae family. They are scientifically known as Brassica juncea and are the close kins of cabbages, turnips and broccoli. They are widely used in the cuisine of countries like India, China, and Africa. Renowned for its medicinal and health promoting qualities, the vegetable is also used to remove heavy metals from the soil, in hazardous waste sites. This is because of the fact that Mustard Greens plant has a high tolerance for these metals and stores them in their cells. Once this is done, the plant is removed and disposed off carefully. Apart from this, the plant also prevents soil erosion from these sites and thus, averts their further contagion. Coming back to mustard greens, they are known to add a peppery flavor in the recipes in which they are used. In this aspect, their taste has often been referred to as being spunky and soulful. You can easily avail the different varieties of this vegetable in any season of the year, but it is in the best form during the months of December to April.
