  • 1 tbsp Olive Oil
  • 2 cups thick Green Yogurt
  • ½ cup Cucumber (diced)
  • 2 tsp Lemon Juice
  • 5-10 Garlic Cloves (finely chopped)
  • 1 tbsp fresh Mint (chopped)
Directions
  • Combine lemon juice and oil in a small mixing bowl.
  • Add in the yogurt slowly, making sure that it mixes well with the oil.
  • Add in garlic, as per the taste and then put in the diced cucumbers.
  • Stir until evenly distributed. Garnish it with mint. 
  • Serve chilled.
Dill, Cucumber & Yohurt Sauce
 
Ingredients  
  • 1 cup Fat-free Yogurt
  • 2 Garlic Cloves (chopped)
  • 1 cup Cucumber (grated, peeled and seeded)
  • 1 tbsp fresh Mint (chopped)
  • 2 tsp fresh Dill (chopped)
  • 2 tsp Lemon Juice
  • Salt for taste
Directions
  • Place cucumber in a bowl and sprinkle some salt over it. Let it stand for 30 minutes.
  • Next, add yogurt, garlic, mint, dill and lemon juice to the salted cucumber. Mix them well until blended.
  • Place the mixture in the refrigerator for an hour before serving.
Greek-Style Beef Kebabs With Tzatziki
 
Ingredients
  • 2 lb Beef Sirloin (cut into ½ inch chunks)
  • 1 ½ tsp Garlic (granulated)
  • ¼ cup Vegetable Oil
  • 1 ½ tsp Onion Powder
  • 1/8 cup Red Dry Wine
  • 2 tsp Fresh Rosemary (optional)
  • 2 tsp Oregano (dried)
  • 2 tsp Salt
  • ½ tsp fresh Ground Black Pepper
Directions
  • Combine all the ingredients and mix so that they coat each of the meat pieces properly.
  • Thread the pieces onto the skewers and refrigerate for the night.
  • Next morning, grill the meat over medium high heat to desired level of doneness.
Exotic Tzatziki Recipe
 
Ingredients
  • ¼ Cucumber (finely diced, peeled and seeded)
  • 2 cups Non-fat Yogurt
  • 1 tsp Fresh Mint (minced)
  • ½ tsp Salt (divided)
  • 2 tsp Fresh Dill (minced)
  • 1/8 tsp Ground Black Pepper
  • 3 Pita Breads (toasted and cut)
  • 1 cup Green Beans (cooked)
  • 1 cup Baby Carrots (sliced)
  • ½ Red Bell Pepper (thinly sliced)
  • ½ Yellow Bell Pepper (thinly sliced)
  • ½ Orange Bell Pepper (thinly sliced)
Directions
  • Line a sieve with cheesecloth and place the sieve over a bowl.
  • Pour in yogurt into the bowl with cheesecloth sieve and let it drain at room temperature for about 2 hrs or until thick.
  • Place the diced cucumber into a cullender and sprinkle it with ¼ tsp salt. Let it drain for 30 min, after which rinse and dry it completely.
  • Take a medium bowl and stir together drained yogurt, cucumber, dill, mint, black pepper and the remaining ¼ tsp salt and mix them well.
  • Pour the yogurt mixture into a serving bowl and place the bowl in the centre of a platter.
  • Surround the platter with pita bread, carrots, green beans and red, yellow and orange bell peppers.
