Ingredients
- Nonstick Spray or Shortening
- 2 cups All-purpose Flour
- 2 tsp Baking Powder
- 1/4 tsp Salt
- 1 cup Unsalted Butter, softened
- 1 cup Sugar
- 4 large Eggs
- 1 tsp Vanilla Extract
- 1/4 cup Fresh Lemon Juice
- 1 Lemon (zest - only the yellow part)
Instructions
- In a bowl, whisk together flour, baking powder and salt. Set aside.
- Take a separate bowl and put butter and sugar in it.
- Cream the butter and sugar together, till they become light and fluffy.
- Into the butter-sugar mixture, beat in one egg at a time, mixing well.
- Add vanilla extract, lemon juice and lemon zest. Mix well.
- Pour the flour mixture into the butter mixture and stir thoroughly.
- Place an oven rack in center position and preheat the oven to 350oF.
- In the meantime, grease the cake pan with nonstick spray or shortening.
- Line the bottom of the pan with parchment paper and grease it well.
- Pour the cake batter in the greased pan and even it out with a spatula.
- Place the pan in the oven and bake for 45 minutes.

- 2 Lemons (juice)
- 4 Eggs
- 1 cup Self-rising Flour
- 1 cup Butter
- 3 tbsp Icing Sugar
- 1 cup Sugar
Instructions
- Sift the self-rising flour well, put into a bowl and set aside.
- First of all, put the butter in a bowl and add 3 tbsp of icing sugar
- Cream the butter and sugar together.
- Add sifted flour and beaten eggs to butter-sugar mixture, alternatively.
- Place an oven rack in center position and preheat the oven to 400oF.
- In the meantime, grease the cake pan with nonstick spray or shortening.
- Line the bottom of the pan with parchment paper and grease it.
- Pour the cake batter in the greased pan and even it out with a spatula.
- Place the pan in the oven and bake for 40 minutes.
- In the meantime, boil sugar and lemon juice together and mix well.
- After the cake is ready, remove it from oven and keep on a plate.
- Pour the lemon mixture on top of the cake, let it cool down and serve.
