How To Make Homemade Cookies

Cookies or biscuits are the most trusted evening snacks that we must have come across. Though we associate them with American populace, few know that they originated in the Scandinavian nations, under the Dutch name of koekje. Also, it has existed for as long as baking is known to have existed. They can be made with both refined as well as whole wheat flour and can have a variety of flavors like chocolate chip, ginger, vanilla, coconut and plain butter. As we cannot imagine our evening tea times without cookies or biscuits of some kind, we end up spending a lot of money on processed and packaged varieties. So is the case, because not many of us know that they can be made at home with very little effort or money. Here are a few ways to make cookies at home, using both whole-wheat flour as well as refined flour. Here’s how to bake your own cookies at home.
Homemade Cookies Recipes
Chocolate Chip Cookies
  • Refined flour – 2 ¼ cups
  • Sugar – ½ cup
  • Baking soda – 1 tsp
  • Brown sugar – 1 cup (best for making cookies!)
  • Eggs – 2
  • Margarine or butter – 1 cup or 2 sticks
  • Vanilla essence – 1 tsp
  • Milk – 2 tbsp (optional)
  • Cookie sheet
  • Cookie cutter
  • Salt – a pinch
  • Chocolate chips – as much as you like! 
In a pan, melt the butter or margarine. In a large bowl, sift the flour and add baking soda and salt to it. Pour the melted butter or margarine into a mixing bowl and cream it with both brown and white sugars, i.e. whip them till you get a thick, smooth liquid. Add the eggs (white and yolk), milk, and vanilla essence to this creamed sugar mixture, simultaneously whipping vigourously. Now, slowly add the flour mixture even as you keep beating constantly, to prevent formation of lumps. Add the chocolate chips at this stage and chill the dough in the fridge for fifteen or twenty minutes. In the meantime, line the cookie tray with butter paper or parchment paper. Now, using a cookie cutter, cut out the cookies and arrange them on the piece of parchment. If you do not have a cookie cutter, you could use a spoon to get more or less the shape of the cookie that you come across. In an oven preheated at 350 degrees F, put the cookies to bake for fifteen to twenty minutes. Remove them afterwards and allow them to cool for about ten minutes. Then, add another batch and bake till all the dough is finished.
Whole Wheat Ginger Cookies

Apart from all the other ingredients like butter, sugar (white and brown), flour (whole wheat flour will be used this time), milk, baking soda etc, we shall need the following:
  • Ground ginger – 1 tbsp
  • Ground cloves – 1 ½ tsp
  • Ground cinnamon – 1 ½ tsp
  • Ground nutmeg – 1 ½ tsp
  • Ground all spice – 2 tsp 
In the same way, melt the butter and cream it with both the sugars in a mixing bowl. Now add the eggs, milk, whole wheat, baking soda, and salt to the mixture and whip vigourously to avoid the formation of lumps. Add the ground spices and ginger, and refrigerate for fifteen or twenty minutes. Spoon out little lumps on a baking tray lined with butter paper and bake at 350 degrees F for twenty minutes. Then allow the cookies to cool and remove from the tray one by one.
