Ingredients
  • 100g Dark Chocolate Bar
  • 50g Caster Sugar
  • 300ml Double Cream
  • 1 large Egg White
  • 2 tbsp Amaretto or any other Liqueur
  • White or Dark Chocolate Shavings (for garnishing) 
Method
  • Using chocolate chippers, chop up the chocolate bar into small pieces. You can use a chef’s knife or even a serrated knife if you do not have a chocolate chipper.
  • In a small saucepan, take half of the quantity of the cream and heat it until it begins to boil.
  • Remove the saucepan from the heat and toss in the chopped chocolate pieces, stirring continuously until the chocolate completely melts.
  • Take a large bowl of ice-cold water and place a medium sized bowl into it. Pour the molten chocolate into the bowl and add the remaining cream and liqueur to it.
  • Using an electric blender, whisk the mixture until light and frothy. Remove the bowl from the water.
  • In another bowl, take the egg white and beat it with an electric blender until it forms soft peaks. Add sugar to it, adding only one tablespoon at a time and whisk again.
  • Now add the egg mixture to the chocolate mixture and blend once again.
  • Pour the mousse in chilled martini glasses and top it with chocolate shavings.
  • Serve chilled.

Ingredients For The Crust 
  • ¼ cup (½ stick) Unsalted Butter (cut into pieces)
  • 21 Chocolate Sandwich Cookies 
Ingredients For The Mousse 
  • 12 ounces semi-sweet Chocolate (finely chopped)
  • ¼ cup Sugar
  • 1 tsp Vanilla Extract
  • 3 ¾ cups Chilled Whipping Cream
  • Pinch of Salt
  • Chocolate Shavings (optional) 
Method 
  • To prepare the crust, preheat the oven to 350°F.
  • Grease and flour a 9'' spring-form pan with 2 ¾'' high sides.
  • Crush the cookies and grind them into a fine powder.
  • Add butter and spin the blender until evenly mixed.
  • Put the crumb mixture into the greased pan, and spread it well. Bake for 5 minutes. Shift the crust to a rack and allow it to cool.
  • In a food processor, take chocolate, vanilla and salt.
  • In a heavy saucepan, take a cup of cream and bring it to boil.
  • Run the processor and slowly sparge in the hot cream and whirl until the chocolate melts and you achieve a desired consistency.
  • Transfer the mixture into a large bowl and allow it to cool.
  • In a separate bowl, take 2 cups of cream and sugar and whisk it until it forms stiff peaks. Add in the chocolate mixture and mix well.
  • Pour the mixture onto the prepared crust and chill for at least 6 hours.
  • Just before you serve, take the remaining cream and beat it into firm peaks.
  • Using a pastry bag with a medium star tip, make cream rosettes on the edge of the pie.
  • Garnish with chocolate shavings and serve.
