Seafood Lasagna

Ingredients

  • 4 Garlic Cloves (crushed)
  • ½ cup Margarine
  • 2 cups of Milk
  • ½ cup Flour
  • 1 tsp Basil Leaves (dried)
  • 2 cups Mozzarella Cheese (shredded)
  • Salt and Pepper (to taste)
  • 2 cups Chicken Broth
  • 8 oz Lasagna Noodles
  • 4 oz can tiny Shrimps (drained)
  • 7 oz can Crab Meat (drained)
  • 1 ½ cups Cottage Cheese (creamed)
  • ½ cup Parmesan Cheese (grated)
Method
  • Melt the margarine in a 3 quart saucepan over low heat and add in the garlic, flour and salt.
  • Cook it until bubbles are visible, while stirring constantly. Remove it from heat and stir in the milk, chicken broth and basil.
  • Return the mixture to heat and bring it to a boil, stirring constantly. Boil and stir for a minute.
  • Reduce the heat and stir in the mozzarella cheese and pepper. Cook over low heat until the cheese melts. Remember to stirring constantly.
  • Spread ¼ portion of the cheese mixture in an ungreased 9x13 inch baking dish and layer 3-4 uncooked lasagna noodles over the cheese mixture.
  • Place the crab meat, shrimp, a ¼ portion of the cheese mixture, the remaining noodles and the remaining cheese mixture over the noodles. Sprinkle with parmesan cheese.
  • Bake it uncovered at 350 degrees Fahrenheit for 35-40 minutes or until hot and beginning to brown. 

Sweet Pea Lasagna

Ingredients
  • 16 oz container of Ricotta
  • 10 oz package of Peas (frozen)
  • Kosher Salt and Black Pepper (to taste)
  • 16 oz jar of Marinara Sauce
  • ¼ cup Mozzarella Cheese (shredded)
  • 9 oz package no-boil Lasagna Noodles
Method
  • Heat the oven to 400 degrees Fahrenheit and then place the peas in a colander or large strainer and run under cold water until defrosted. Let it drain.
  • Take a medium bowl and combine the ricotta, peas and ¼ teaspoon each of salt and pepper together. Spoon half of the marinara into an 8 inch square baking dish and top it with 2 layers of lasagna noodles.
  • Spread half of the ricotta mixture over the noodles and top it with a single layer of lasagna noodle. Spread the remaining ricotta mixture and then top it with two layers of noodles and the remaining marinara.
  • Sprinkle the mozzarella and loosely cover with foil and bake for 45-50 minutes till the noodles are cooked.
  • The dish is now ready to be served.
