- 8 ounces egg noodles, uncooked
- 1/2 cup butter (8 ounces)
- 1 cup sliced mushrooms, about 4 ounces
- 1/3 cup flour
- 2 cups chicken broth
- 1 cup milk
- 1/4 cup pimiento, chopped (2 ounce jar, drained)
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 2 cups cooked diced chicken
- 1/3 cup grated Parmesan cheese
Preparation
- In a saucepan, boil the noodles and then drain the water.
- Take a large skillet and place it over low heat. Melt the butter in the skillet.
- Sauté the mushrooms and then add the flour. Stir to blend in the flour until smooth.
- Slowly add the broth, milk, pimiento, salt, and pepper. Stir constantly until the sauce is thick.
- Grease a 2 ½-quart casserole with butter. Put in the noodles, chicken and salt.

Chicken Casserole And Macaroni With Mushrooms
Ingredients
- 8 ounces elbow macaroni
- 4 1/2 tablespoons butter, divided
- 8 ounces sliced fresh mushrooms
- 2 tablespoons flour
- 2 1/4 cups milk
- 1/8 teaspoon ground black pepper
- 1 teaspoon salt
- 2 cups shredded mild Cheddar or Cheddar Jack combination, divided
- 2 cups diced cooked chicken
- 1 cup frozen peas, cooked
- 1 tablespoon fresh chopped parsley
- 1 cup bread crumbs, soft
Preparation
- Cook the macaroni and drain. Then rinse it under hot running water.
- Heat a saucepan and melt a tablespoon of butter in it.
- Stir in the mushrooms and cook until slightly browned. Remove the mushrooms and keep aside.
- Into the same saucepan, melt two tablespoons of butter and the flour. Stir until the flour is well blended.
- Slowly add the milk and stir.
- Sprinkle salt and pepper. Stir and cook until thickened.
- Add the mushrooms to the sauce and then add 1 ½ cups of shredded cheese.
- Now, add parsley, chicken, peas, and macaroni. Stir thoroughly to blend.

- In another pan melt the remaining butter and toss the breadcrumbs in it. Sprinkle the crumbs on top of the casserole.

Ingredients
- 1 cut-up frying chicken
- 1 cup long grain white rice
- 1 envelope onion soup mix
- 1 can cream of chicken soup
- 1 1/2 cans water
- 4 ounces can sliced mushrooms

- 1/2 teaspoon pepper
Preparation
- Mix the rice, onion soup mix, cream of chicken soup, water, and sliced mushrooms in a bowl.
- Season with salt and pepper.
- Transfer the contents to a casserole.
- Place the chicken on top of the rice.
