Honey Roasted Almond Recipes

Honey Roasted Almonds

Ingredients
  • 2 tbsp Honey
  • 2 cups whole Almonds with skin
  • 2 tbsp Water
  • 2 tsp Olive oil
  • ¼ cup Sugar
  • ½ tsp Salt
Method 
  • Roast the almonds in an oven at 350o F for 30 minutes or until they get crunchy.
  • Mix the sugar and salt in a bowl and set aside.
  • Take a saucepan and heat the honey, water and oil together over medium heat till it boils. Add the almonds and stir constantly.
  • Continue cooking and stirring till the liquid evaporates. Remove from heat and add sugar and salt. Mix well and toss.
  • You can save the left over sugar and salt mixture for the next batch of roasted almonds.

Honey Roasted Almonds With Ginger

Ingredients
  • 4 cups of Almonds with skin
  • 2 tbsp Honey
  • 2 tsp Sea Salt
  • ½ cup dark Brown Sugar
  • 2 tsp Canola oil
  • 2 tbsp Water
  • 2 tsp ground Ginger
Method
  • Place the almonds in a single layer over a baking sheet and roast them moderately in a hot oven for 10 to 15 minutes.
  • In a separate bowl combine the dark brown sugar along with salt and ground ginger and keep the bowl aside.
  • Take a large saucepan, and combine the honey canola oil and water and allow the mixture to simmer. Stir the mixture constantly with the wooden ladle to avoid the honey from sticking behind the ladle.
  • Pour this honey mixture over the almonds and mix them well to coat all almonds. Sprinkle the dark brown sugar and ground ginger over the coated almonds and spread them over a baking sheet to cool. 

Spicy Honey Roasted Almonds

Ingredients
  • 2 tbsp Butter
  • 4 cups Almonds with skin
  • 2 tsp Sea Salt
  • ¼ tsp Cayenne Pepper
  • ½ cup granulated Sugar
  • 2 tbsp Honey
  • ¼ tsp Garlic powder
  • 1 ½ tsp Paprika
Method
  • Preheat the oven to 165oC. Take a medium size bowl, add the granulated sugar, cayenne pepper, paprika and garlic powder and set it aside.
  • Stir in the butter, honey and salt in a large saucepan and heat it over medium heat till the butter melts and the mixture gets sticky and caramelized.
  • Add the almonds and stir them with wooden ladle to evenly coast the almonds in the mixture. Once almonds are coated properly, place them in a single layer on a baking dish which is lined with parchment paper.
  • Bake the almonds until they turn golden brown. Transfer them into a bowl and sprinkle the spice mixture over them.
  • Toss the almonds well to coat each of them in the mixture.
Tips
  • Once the almonds get roasted, pickup one almond and break it to see the colour inside. If the colour inside is light brown, your almonds are well roasted. But, if you are still not sure after seeing the colour, take a bite to check the crunchiness.
  • If you wish to have plain roasted almonds, you can stop after the first step.
  • Roasted almonds tend to stick to one another in an air-tight container due to the sugar coating. Shake the container gently to separate the almonds.
  • Roasted honey almonds are best when consumed within 3-4 days.
