Buying & Storing Facts 
  • Fresh scallops have white flesh, which is firm and doesn’t show any hint of browning. Frozen scallops should look solid and shiny, and the inside of their packaging should be frost-free.
  • Fresh scallops are odorless or may have a slightly sweet scent. It is better to purchase scallops on display to detect any ‘off’ smell, which cannot be detected through plastic.
  • Special storage methods are required to keep scallops fresh. Store nicely wrapped scallops in a baking dish filled with ice. Put the baking dish in the coolest area of the refrigerator.
  • Freezing the scallops can extend their shelf-life. Store them in the coldest part of the freezer, where they will remain safe to use for another 3 months.
