Ingredients
  • 2 six-oz Salmon filets
  • 2 Garlic cloves (minced)
  • ½ tsp Ginger (ground)
  • 3 tbsp Extra Virgin Olive oil
  • 1 tbsp Red Wine Vinegar
  • 4 tbsp fresh Basil (chopped)
  • Salt (to taste)
  • Pepper (to taste)
  • Cayenne Pepper (to taste)
Method
  • Make three or four shallow cuts on each side of the salmon filets and set aside.
  • Mix all the marinade ingredients in a large bowl.
  • Add the salmon and coat both sides well. Make sure to get the mixture into the shallow cuts that you made. You can also stuff some of the minced garlic pieces in them.
  • Marinate for one hour in the refrigerator.

Ingredients
  • 2 lb Salmon
  • ¼ cup Brown Sugar
  • 2 cups Teriyaki sauce

Method
  • In a mixing bowl combine the brown sugar and teriyaki sauce.

  • 1 six-oz Salmon steak (per person)
  • 2 sticks Lemon Grass (bruised)
  • 2 tbsp Soy sauce
  • 2 cloves Garlic (crushed)
  • 1 x 1 inch (2cm) piece of Ginger (peeled and chopped)
  • 1 Red Chili (finely chopped)
  • 2 Limes (juiced and skins kept)
  •  ¼ pint Olive oil

Method

  • Mix all the ingredients including the used lime halves for the marinade together.
  • Pop the salmon fillets or steaks in a non-corrosive dish and pour the marinade over the fish, turning the fillets over to coat both sides. Leave for 1 - 2 hours.
  • Heat the barbeque until hot.
  • Place the salmon on the barbeque flesh side down. Cook for 5 minutes.

  • 1 ½ lb Salmon
  • ¼ cup Soy sauce

  • 1 cup Orange juice

Method
