Quick Appetizer Recipes 
 
Baked Ham And Cheese Quesadilla
 
Ingredients 
  • Flour tortillas – 4 large ones
  • Smoked turkey or thinly sliced ham – 8 ounces
  • Shredded cheese – ½ cup
  • Vegetable oil
  • Diced tomatoes – ½ cup
  • Pepper
  • Chopped green onion – 2 tablespoons 
Method 
  • Place two tortillas on a cookie sheet, which has been lightly sprayed with vegetable cooking spray.
  • Add ¼ cup of cheese on top of the tortillas and top it with sliced ham or turkey, green onion, diced tomatoes and then cheese again on top of it.
  • Sprinkle both tortillas with pepper and then cover it each with another tortilla.
  • Slightly smear vegetable oil on the tops of each and bake until they turn golden brown.
  • Cut into wedges and serve with mayonnaise or mustard. 
Bread Pakora
 
Ingredients 
  • Mashed potatoes – 1 cup
  • Chopped onion – ¼ cup
  • Chopped green chili – 1
  • Big Bread slices – 6
  • Red chili powder – ¼ teaspoon
  • Turmeric powder – ¼ teaspoon
  • Garam masala powder – ¼ teaspoon
  • Mango powder – ¼ teaspoon
  • Dry fenugreek leaves – 1 teaspoon
  • Salt to taste   
  • Vegetable oil as required 
Method 
  • Mix mashed potatoes, chopped onion, green chili, red chili powder, turmeric powder, garam masala, mango powder, fenugreek leaves, and salt. Knead to make smooth dough.
  • Divide this mixture into 6 equal parts.
  • Soak bread slice in water and then squeeze out the water by pressing the bread slice (flat) between the palms.
  • Take one part of the potato mixture, put it in the centre of the bread slice, and seal all its edges. Gently roll it between your palms to give it an elongated shape. Ensure that the potato mixture is completely covered with the bread slice.
  • Similarly make all the six bread rolls.
  • Heat oil in a deep frying pan on high. Reduce the heat.
  • Deep-fry the bread rolls until golden brown.
  • Serve hot with chutney or chili sauce. 
Vegetable Cutlet 
 
Ingredients 
  • Mashed potatoes – 2 cups
  • Boiled green peas – ½ cup
  • Chopped onions – ½ cup
  • Chopped green chili – 2
  • Bread slices – 4
  • Bread crumbs – 1 cup
  • Red chili powder – 1 teaspoon
  • Garam masala powder – 1 teaspoon
  • Turmeric powder – ¼ teaspoon
  • Salt to taste   
  • Vegetable oil as required  
Method 
  • Mix mashed potatoes, green peas, chopped onions, chopped green chili, red chili powder, garam masala, turmeric powder, and salt.
  • Soak the bread in water and squeeze all the water by pressing bread between the palms.
  • Mix bread and potato mixture and knead to make a smooth dough.
  • Take small quantity of this mixture and make ball form. Then flatten it on a smooth surface in a square shape. Cut into two (triangular) parts, each half should be about 1-2 cm thick.
  • When you are done with the potato mixture, roll each of the cutlet in bread crumbs.
  • Heat oil in a kadhai / deep frying pan.
  • Deep fry the cutlets until golden brown.  
  • Serve hot with bread and tomato sauce. (Optional- Cut the bread slices of same shape as the cutlet. Then place the cutlet between the bread slices and serve with ketchup).
