Grilled Scallop Recipes

Scrumptious Grilled Scallops

Ingredients

  • 8 Lemon wedges
  • 1 lb Scallops
  • ¼ tsp Salt and Pepper each
  • ½ cup of Melted Butter
  • ½ cup Olive Oil
  • ¼ tsp Sweet Hungarian Paprika
  • 1 tbsp Parsley (Chopped)

Preparation

  • Combine together ¼ cup of olive oil, salt, pepper and paprika in a shallow bowl and mix the ingredients well.
  • Place the scallops in another bowl and coat them with olive oil and spices. Use the remaining olive oil to grill.
  • Slide the scallops coated with oil and spices onto the prepared skewers, allowing enough space between the scallops.
  • Bring grill to medium high heat in the area where you will be grilling the scallops and then place the scallops on the grill. Cook them for about 2 minutes on both the sides. Turn the skewers from time to time to make sure all sides get time on full heat.
  • Once done, remove scallops from heat. Serve with melted butter sprinkled with fresh parsley and lemon wedges.

Garlic Grilled Scallops

Ingredients

  • 1/3 c Butter
  • 1 lb Scallop
  • 12 Cherry Tomatoes
  • 3 Clove Garlic (Minced or Pressed)
  • 1 green Pepper (Cut into 12 Squares)
  • ¼  cup Shallots (Finely Chopped)
  • ¼ tsp Nutmeg
  • 1/8 tsp Celery Salt

Preparation

  • Thaw scallops completely, if frozen, and dry on paper towels.
  • Combine together butter, garlic, shallots, parsley, nutmeg and celery salt in a frying pan. Sauté the ingredients over low heat for 5 minutes stirring occasionally.
  • At the same time string scallops on 4 wooden skewers along with the cherry tomatoes and green peppers.
  • Put the charcoals on fire and when coals get coated with an even layer of gray ash, place skewers on the grill. Grill them by applying butter mixture and turning them often for about 6-7 minutes.

Grilled Sea Scallops

Ingredients

  • 18 sea Scallops
  • 2 tbsp Lime Juice
  • 3 Lemons
  • ¼ lb Unsalted Butter (Melted)

Preparation 

  • Cut limes into quarters and place 3 scallops and two lime wedges on each skewer.
  • Combine melted butter and lime juice and brush over both sides of scallops while cooking on grill.

Grilled Scallops With Black Beans

Ingredients

  • 1 tsp Olive Oil
  • Cooking Spray
  • 1 cup of diced Onions
  • 1 lb Sea Scallops
  • 1 tsp ground Cumin (Divided)
  • ¼ tsp ground Red Pepper
  • 2 cups of drained canned Black Beans
  • 1 tsp Balsamic Vinegar
  • 2 large Garlic Cloves (Minced)
  • ½ cup red Bell Pepper (Finely Chopped)

Preparation

  • Place the scallops in a shallow dish. Combine together olive oil, ½ teaspoon cumin, ground red pepper and sprinkle the mixture over scallops and toss them gently.
  • Cover the scallops and marinate for 30 minutes, stirring occasionally.
  • Coat a large non-stick skillet with cooking spray and place over medium-high heat until hot. Add onion and garlic and sauté until it gets tender.
  • Add in red bell pepper and sauté until it gets tender. Stir in the remaining ½ teaspoon cumin and black beans and sauté for another 3 minutes.
  • Remove it from heat and stir in the vinegar. Set aside and prepare the grill.
  • Remove the scallops from the dish and thread onto 4 skewers. Place the skewers on the grill rack coated with cooking spray.
  • Grill for 3 minutes on each side and spoon black bean mixture evenly on individual serving plates.
