The two most common styles of preparing crab cakes are deep frying and baking. They are often prepared with no filler and are made of all-lump crab meat mixed with other ingredients, such as, parsley, onions, eggs, and seasoning. Traditionally, the meat of blue crab is considered the best for this lip smacking dish, albeit you can use crabs of any species. Given below are the two common methods used for preparing crab cakes.
How To Prepare Crab Cakes
Frying Method
Ingredients (will make 6 cakes)
Lump Crabmeat - 1lb
Mayonnaise - 4 tbsp
Bread Crumbs - 1 tbsp
Yellow Mustard - ½ tsp
Fresh Ground Black Pepper - ¼ cup
Worcestershire Sauce - 2 tbsp
Baking Powder - ¼ tsp
Salt - 2 tsp
Crushed Crackers - 1 cup
Eggs - 1 (beaten)
Parsley - ½ cups (minced)
Olive Oil or Butter for cooking - 4 tbsp
Method
- Clean the crab by discarding the shell and scoop out the meat.
- Add salt and pepper to it.
- Mix all other dripping ingredients in another bowl and fold it into crab meat.
- Now add baking powder, parsley and half cup of crushed crackers.
- Make small cakes with the mixture and coat it with the remaining crushed crackers.
- Heat oil or butter in a frying pan on a medium flame.
- Place the crab cakes gently on the pan and fry them until brown on each side (10 minutes).
- Serve hot with lemon and red chili sauce.
Baking Method
Ingredients
Crabmeat - 1 pound
Bread Crumbs - 1 tbsp
Chopped Parsley - ½ cups
Egg - 1 (well beaten)
Mayonnaise - 1 tbsp
Dry Mustard - ½ tsp
Hot Pepper Sauce - 2 tbsp
Salt - 2 tsp
Oil for baking
Method
- Clean the crab meat and remove any shell particles.
- Mix all the dry and wet ingredients in separate bowls.
- Gently combine them together and beat lightly.
- Make medium sized cakes with the mixture.
- Preheat the oven up to 250-300 degree Celsius.
- Place the cakes on the greased pan and bake them until brown. (approx. 15-20 minutes).
- Serve hot with lemon and red chili sauce.
