How To Make Fudge Cake
 
Chocolate Fudge Cake Recipe 
  • Preparation Time: 50 min
  • Serves: 10
Ingredients 

For The Cake:

  • 2¾ cups All Purpose Flour
  • ¾ cup + 1tbsp Granulated Sugar*
  • 1/3 cup Light Brown Sugar
  • ¼ cup Cocoa Powder
  • 2 tsp Baking Powder
  • 1 tsp Baking Soda
  • ½ tsp Salt
  • 3 Eggs
  • 1 tbsp Vanilla Extract
  • ½ cup + 2 tbsp Sour Cream*
  • ¾ cup Unsalted Butter (melted and cooled)
  • ½ cup Corn Oil
  • 1+1/3 cup Cold Water *
For Icing:
  • 6 oz. Bittersweet Chocolate
  • 1 cup + 2 tbsp Unsalted Butter (melted)*
  • 1¾ cup Sugar (sifted)
  • 1 tbsp Vanilla Extract
(* all to be used for the cake, the plus sign is used to depict exact measurements)
 
Method
  • Preheat the oven to 350°F.
  • Butter the bottom and sides of two 8” cake pans.
  • In a large bowl, take all the flour and mix it with the entire quantity of white and brown sugar, cocoa powder, baking powder & soda and salt and keep aside.
  • In another bowl, whisk together the eggs, sour cream and vanilla till they are fully blended as one uniform mixture.
  • Beat the melted butter and corn oil with the help of an electric handheld mixer till it is blended. Beat in the water after this.
  • Add the dry ingredients from the first bowl at once and mix together on a slow speed. Mix in the egg mixture and blend again.
  • Grease a cake pan and sprinkle some flour over it. Slowly transfer the cake mix into this pan and set it into the oven for about 45 minutes
  • Bake until a toothpick comes out clean.
  • Cool the cake pans on a wire rack for about 15 minutes and turn the cake out to cool completely.
For Icing
  • This is the best part of the fudge cake! Melt the chocolate for about 2-3 minutes without burning (double boiler with simmering water underneath). Leave it to cool down enough to avoid burns.
  • Till the chocolate cools, beat the butter until it is soft and creamy and add in the sifted sugar. Make sure there are no lumps formed and the mixture looks fluffy.
  • Before the chocolate hardens again, gently add the vanilla extract to it and mix together until smooth.
  • Now blend in the butter mix with the chocolate and your icing is ready. 
  • Apply a spatula full of this icing in the centre of the cake and spread it generously on the top and sides too!
  • Refrigerate the cake for about an hour and it’s all ready for you to eat!
