Egg Casserole

Ingredients
  • 1 large jumbo Egg
  • 3-4 drops Worcestershire sauce (to taste)
  • ¼ tsp Mustard (prepared)
  • 2 tbsp Parsley (chopped)
  • 2 tbsp Scallions (chopped)
  • 2 tbsp Cheddar cheese (shredded)
  • ¼  cup Bean sprouts (chopped)
Method
  • Break the egg into a lightly greased individual baking dish.
  • Stir egg to break yolk.
  • Add mustard, worcestershire, bean sprouts, onion and parsley.
  • Stir to mix thoroughly.
  • Put in the half shredded cheese into it.
  • Top with remaining cheese.
  • Place dish in a larger pan that has about 1 inch hot water in it.
  • Bake the dish at 350 deg F for 10-15 minutes, until the egg is firm.

Spicy Andouille Egg Sandwich 

Ingredients
  • 1 Andouille sausage link (5-inch length, sliced)
  • 2 large Eggs
  • 1 tbsp Milk
  • 1/8 tsp Salt
  • Dash of Black Pepper (freshly ground)
  • Dash of Cajun or Creole seasoning
  • 2-3 tsps Butter (unsalted)
  • Mozzarella cheese (2 small slices)
  • 2 medium Ciabatta Breads (about 3 ½ to 4 inch squares)
Method
  • Slice the sausage link in half crosswise, and then slice into 4 or 5 thin slices lengthwise.
  • In a small skillet brown the sausage on both sides, set aside.
  • Beat eggs in a small bowl with milk, salt, pepper, and seasoning.
  • Slice the Ciabatta bread horizontally.
  •  In a medium skillet melt butter over medium heat.
  • Add eggs and let it firm up around the edges.
  • With a spatula, form the egg into a rectangle, letting the remaining liquid egg flow around it.
  • Continue cooking and shaping with the spatula until firm enough to flip.
  • Flip and let the other side cook until the eggs are firm but still moist.
  • Remove from heat.
  • Cut in half and divide egg between two bottom halves of ciabatta bread or other bread.
  • Top the egg with the thinly sliced sausage then place a slice of cheese on top.
  • Finish with bread tops.
  • Grill or cook in a Panini press until sandwich is hot and cheese is melted.
  • Makes 2 medium sandwiches.

Cashew Quiche

Ingredients
  • 3 eggs
  • ½ cup Butter
  • 1 cup Carrots (sliced)
  • 1 cup Cashews
  • ½ cup Honey
  • 1 ½ cups heavy Cream
  • ½ tsp Nutmeg
  • ½ tsp Salt
  • ¾ cup Cheddar cheese (shredded)
  • 1 (9 inch) pie (crust)
Method
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Melt the butter in a skillet over medium heat.
  • Stir in the carrots and cashews and cook until carrots are tender and cashews are golden brown.
  • Mix in the honey.
  • In a bowl, beat together the eggs, heavy cream, nutmeg, and salt.
  • Evenly spread the cheese in the bottom of the pie crust.
  • Layer the carrot mixture over the cheese, and top with the egg mixture.
  • Bake for 40 minutes in the preheated oven, until a toothpick inserted in the center comes out clean.
