Beer Cheese Soup Recipe

Soup is usually considered a starter that is taken before the main meal. This is because it is considered to enhance the appetite of a person. However, this largely depends upon the type of soup you are having. There are soups which are quite heavy in their content and tend to make you feel filled faster. Beer Cheese Soup is one such soup, which is not only healthy but also tempting. Owing to the rich ingredients used in the preparation, it is quite satisfying. How to Make Beer Cheese Soup
 
Ingredients
 
·        2, 12 oz. cans of Beer
·        16 Slices of Bacon
·        ¾ cup to 1 cup Onions, finely diced
·        1 cup Celery, minced
·        1 cup Carrot, chopped
·        1/2 cup Sweet Red Pepper, minced
·        2, 10½ ounce cans Chicken Broth
·        1/2 cup Flour
·        2 cups Half & Half (half whole milk and half cream)
·        6 cups Cheddar Cheese, shredded
·        2 tbsp Sugar
·        Salt & pepper to taste
 
Instructions
 
  • Open the beer cans and let it stand, while chopping your veggies.
  • Take a pan and sauté bacon until crisp.
  • Drain and set the bacon aside, after crumbling.
  • Reserve 4 tbsp. for drippings.
  • Take a large soup kettle and sauté the vegetables in reserved bacon drippings.
  • Cook till the vegetable become tender.
  • After this, slowly add the chicken broth to the kettle, stirring continually.
  • Following this, add 1½ can of beer, while stirring continuously.
  • Bring the preparation to a boil and then lower the heat.
  • Pour the remaining beer into a mixing bowl, along with flour and whisk.
  • Slowly add the above mixture to the broth, stirring constantly until thick.
  • Now, add half & half, bacon and cheese.
  • Cook until the cheese completely melts.
  • Mix in the sugar, stirring it till it dissolves.
  • Add salt and pepper to taste.
